Bulgur wheat - packed with vitamins, minerals, and fiber. This is a quick savory snack that goes well with a yogurt dip.
Ingredients
For the bulgur wheat balls
1 cup bulgur wheat
2 eggs
1 small red onion, finely chopped
2 generous tsp turmeric
2 generous tsp ground cumin
1 tsp cinnamon
1/2 tsp cayenne pepper
1/2 tsp garam masala
1/4 cup chopped cilantro
2 tbsp olive oil
Salt and pepper to taste
For the yogurt dip
1/4 cup yogurt
1/8 red onion, finely diced
A handful of cilantro, chopped
1/4 tsp cumin
1/4 tsp garlic powder
Dash of cayenne pepper
Salt and pepper taste
Directions
Preheat oven to 180c/350 f.
Pour bulgur wheat mixture into 8 cupcake tins
Bake for 10 minutes at 180c/350f, then broil for 3 minutes.
While its baking, mix together all the ingredients for the yogurt dip.
Serve with the yogurt dip, and enjoy!

You can also serve this with a tamarind sauce.
If you'd prefer something a little lighter, skip out the garam masala.
You can also fry the bulgur wheat balls, with 4 tbsp of olive oil, but you should add an extra egg and some bread crumbs so help the ball stick together.
