Shrimp & grits - one of my favorite Southern dishes. There is something so comforting about grits, which go with literally anything!
Ingredients
Grits
4 cups chicken broth
1 cup grits
½ tbsp butter
¾ cup shredded cheddar cheese
Vegetables
1 tbsp butter
3 cloves garlic, minced
¾ onion, finely chopped
1 red pepper, finely chopped
1 yellow pepper, finely chopped
½ bunch of parsley, finely chopped
Bunch of green onions, finely chopped
1 pinch cayenne pepper
½ tbsp Cajun seasoning
Salt and pepper, to taste
Shrimp
400g pre-cooked (i.e. pink) shrimp, deveined and de-tailed
½ lemon, squeezed
1 pinch of cayenne pepper
1 tbsp Cajun seasoning
Directions
Preheat oven to 180C/350F.
Grits
Heat chicken broth over medium-high heat until boiling, then add grits, and simmer for 10-15 minutes, or as directed on the packaging. Once cooked, set aside and mix in butter and shredded cheese.
Shrimp
Place shrimp in a bowl, mix lemon juice, cayenne pepper, and Cajun seasoning.
Vegetables
Heat butter over medium-high heat and sauté garlic, onion, and peppers over medium heat for 6-8 minutes, or until soft (there should be no liquid in the pan). Add parsley, green onions, and marinated shrimp. Season with cayenne pepper, Cajun seasoning, and salt and pepper. Cook for 4-5 minutes until well combined.
Combine cheesy grits with shrimp mixture and place in a baking dish and top with a bit more cheese and green onion. Bake in pre-heated oven for 8 minutes and broil for 2 minutes, until golden and crispy on the top.
