This is one of my favorite recipes - so easy, quick, delicious, and fresh! It's great topped with cilantro, lime, tortilla chips, or avocado.
Ingredients
3 cooked chicken breasts, shredded
6 cups chicken broth
2 cups cannellini (white) beans cooked or canned
3 cups store-bought salsa verde
1/4 tsp garlic powder
1/4 tsp cumin
1 tbsp hot sauce (optional)
Salt and pepper to taste
Top with chopped cilantro, lime, tortilla chips or avocado
Directions
Combine all ingredients in a large pot over medium heat until simmering. Once simmering, lower heat, and cook covered for 30-40 minutes, until beans are tender.
Top with anything of your choice, and enjoy!
