Salsa verde chicken soup

This is one of my favorite recipes - so easy, quick, delicious, and fresh! It's great topped with cilantro, lime, tortilla chips, or avocado.


Ingredients

  • 3 cooked chicken breasts, shredded

  • 6 cups chicken broth

  • 2 cups cannellini (white) beans cooked or canned

  • 3 cups store-bought salsa verde

  • 1/4 tsp garlic powder

  • 1/4 tsp cumin

  • 1 tbsp hot sauce (optional)

  • Salt and pepper to taste

  • Top with chopped cilantro, lime, tortilla chips or avocado


Directions

  1. Combine all ingredients in a large pot over medium heat until simmering. Once simmering, lower heat, and cook covered for 30-40 minutes, until beans are tender.

  2. Top with anything of your choice, and enjoy!
