Saice - this makes me nostalgic for my childhood. Saice was a popular meal at home growing up. Its a traditional Bolivian stew made with ground beef, the condiment that makes the flavor so unique is the vinegar.
Ingredients
3 cloves of garlic
I can chopped tomatoes
1/2 red pepper, diced
1 tbsp tomato paste
3 tbsp capers
1 medium onion, diced
1 beef broth, crumbled
2 tsp oregano
2 tsp cumin
1/2 tsp garlic powder
1 1/2 cup of beef broth
2 tbsp Worcestershire sauce
1 tbsp olive oil
500 g ground beef
3 carrots, peeled and roughly diced
2-3 potatoes, peeled and roughly diced
1/3 cup apple cider vinegar
Salt and pepper to taste
Directions
In a blender, combine garlic cloves, chopped tomatoes, pepper, tomato paste, capers, onion, crumbled beef broth, oregano, cumin, garlic powder, 1 cup of beef broth, and Worcestershire sauce, and blend together until smooth.
In a large deep skillet (or large pot), heat 1 tbsp of olive oil and brown the ground beef (if you are using a smaller skillet, do this in two batches so the beef browns well).
Once browned, add the carrots and potatoes and cook for 3-4 minutes, then add the mixture from the blender, apple cider vinegar, and salt and pepper to taste.
Add the remaining 1/2 cup of beef broth to the stew and mix to combine well. Turn down the heat and allow to simmer covered for 45 minutes or until the potatoes and carrots are tender. Taste and add salt and pepper as desired.
Serve with white rice and roasted plantains
--Notes--
A handful of green beans in the stew is really delicious, add with the carrots and potatoes
A cup of frozen peas is also good, add 5 minutes before cooking is complete, check they are tender before turning the heat off!
