Ropa vieja - a 10-hour slow cooked cuban roast inspired by my tia Pola, she cooks the most delicious food! This recipe is easy to make and can be left to cook over night just in time for lunch during the week!
Ingredients
2 tbsp olive oil
2 lbs flank steak (or chuck roast/brisket)
500g tomato passata
1 yellow onion, sliced
2 red bell peppers, sliced
2 cups beef broth
6 bay leaves
1/2 tsp cumin
1/2 tsp oregano
1/2 tsp garlic powder
2 tbsp capers
1 tbsp hot pepper sauce
1/2 cup white wine vinegar
Salt and pepper to taste
Directions
Heat olive oil in a large pan over medium-high heat. Sear beef on each side for 3-4 minutes until browned.
Once meat is seared on both sides, add to the crockpot with all other ingredients.
Mix well to combine and cook over low heat for 10 hours, or over high heat for 6 hours.
Serve with rice, platanos, and black beans.
