Mediterranean-spiced salmon

Flaky salmon seasoned with a Mediterranean-inspired spice blend. This salmon goes well with anything! I've made it with roasted vegetables, potatoes, and a bulgur wheat salad included below.



Ingredients

  • 4 (6oz) salmon fillets

  • 2 tbsp olive oil


Mediterranean spice blend

  • 1 1/2 tsp coriander

  • 1 tsp cumin

  • 1/2 tsp paprika

  • 1/2 tsp cinnamon

  • 1/2 tsp ground ginger

  • 1/4 tsp turmeric

  • 1/4 tsp nutmeg

  • 1/8 tsp cayenne pepper

  • Salt and pepper to taste


Bulgur wheat salad

  • 1/2 cup of cooked bulgur wheat

  • 2 tbsp olive oil

  • 1 zucchini, sliced

  • Leeks, 3" inch piece, sliced

  • 1/2 cup of corn

  • 3-4 mushrooms, finely chopped

  • 2-4 tbsp feta

  • 1/4 tsp garlic

  • 1/4 tsp oregano

  • 1/4 tsp paprika

  • Salt and pepper to taste


Directions

For the salmon

  1. Allow salmon to rest at room temperature for 10 minutes.

  2. Combine the spices together in a bowl, then sprinkle over the both sides of the salmon fillet, generously, then coat with 1 tbsp of olive oil and combine well.

  3. Heat the remaining tbsp of olive oil over medium-high heat in a large skillet. Once hot, add salmon and cook on each side for 3-4 minutes or until the salmon turns pink.

  4. Serve with side salad and roasted vegetables of your choice!

For the bulgur wheat salad

  1. Cook bulgur wheat as advised on packaging. Once cooked, set aside and allow to cool.

  2. Heat 2 tbsp of olive oil in a large skillet over medium-high heat. Once hot, add zucchini, leeks, corn, mushroom and cook fro 4-5 minutes, until zucchini softens and begins to golden.

  3. Once the vegetables have soften, add bulgur wheat, garlic powder, oregano, pepper, and salt and pepper to taste. Then add feta - you can be as generous as you want with this.
