Pulled pork - goes well with anything! This pulled pork tastes vibrant in cilantro and lime, of course mixed in with a few other things. The best part is you just blend together the ingredients and throw it in a crockpot with the pork.
Ingredients
3 1/2 lbs/1.5 kg pork shoulder or butt
1 bunch of cilantro
1 red pepper
1 lime, juice
1 onion
3 large garlic cloves, peeled and minced
3 green onions
1 tsp cumin
3 tbsp olive oil
1 tsp salt
1/2 tsp pepper
1 beef stock
1 tbsp corn flour, mixed in a bit of water (optional)
Directions
Blend together all ingredients to make paste, add some water if the blender is struggling to blend all the ingredients together (not too much).
Remove excess fat from pork shoulder, the meat is already quite marbled with fat.
Puncture holes into the meat using the tip of a knife.
Place pork shoulder in the crockpot, cover with paste on all sides.
Cover crockpot and cook on low for 8-10 hours or high for 4-5 hours. If you'd like the juices from the pork to be thicker, mix in 1 tbsp corn starch (mixed in a bit of water) an hour before cooking is complete.
When cooked, remove pork from crockpot, place in a large plate and shred using two forks.
When serving, coat with juices from crockpot, for sides see note 1.

Note 1: This goes well with anything! White rice, roasted vegetables, mashed or roasted potatoes, and even on a Mexican salad with corn, black beans, tomatoes, cilantro, and red onion.
