Coconut again... are you seeing a theme in my recipes? These energy balls are so good, packed full of nutrients, and so easy to make! It's the perfect post-work-out snack.
Ingredients
2 tbsp coconut oil
1 cup walnuts (see Note 1)
12 pitted dates, chopped
4 squares Lindt 90% dark chocolate, chopped
2 tbsp crunchy peanut butter
1 tbsp cacao powder
1/4 tsp coconut extract (optional)
1/4 cup shredded unsweetened coconut
Directions
1. In a food processor (or blender), blend walnuts, dates, and 1 tbsp coconut oil, together.
2. Add chocolate, peanut butter, cacao powder, coconut extract, and remaining tbsp of coconut oil, blend together until well combined.
3. On a large tray, place a baking sheet, roll the mixture into 6 balls.
4. Place shredded coconut on a plate, roll date balls with coconut until coated.
5. Cover and place in the freezer for 2-3 hours, then place in the fridge to eat.

Note 1: You can add any kind of nuts to this - I even added a few almond and pecans.
