Today we had a big brunch. French toast, quiche, bacon, eggs! I originally planned to add the berries fresh but thought a compote with maple syrup would make it better. Its little effort for such a delicious return!
Ingredients
French toast
1 tbsp butter
4 ½-inch slices of white bread
1/8 cup all-purpose flour
1 tsp sugar
½ tsp vanilla extract
½ tsp cinnamon
Sprinkle of nutmeg
Little less than ¼ cup of milk
2 eggs
Berry compote
¼ tsp butter
1 cup of raspberries and blackberries
2 tbsp sugar
1 tbsp lemon juice
1 tbsp flour
Directions
To make the French toast
Combine flour, sugar, vanilla extract, cinnamon, nutmeg, milk, and eggs, mix well, and place on a flat tray.
Heat ½ tbsp of butter over medium-high heat in a large skillet, soak two slices of bread in egg cinnamon mixture and place on pan when hot.
Cook bread on each side until golden, about 2-4 minutes.
Add remaining ½ tbsp butter, soak two slices of bread, and repeat cooking, on each side for 2-4 minutes, or until golden brown.
To make berry compote
Add butter, berries, sugar, lemon juice over low-medium high until berries begin to disintegrate.
Cook berries for 4-5 minutes, then slowly add flour to thicken the sauce.
Serve over French toast with maple syrup and any other toppings of your choice.
